Christmas cake

Christmas cake is a dark, moist and heavy fruitcake which is covered with a layer of marzipan and icing and then decorated. It isn't part of the Christmas meal but as a seasonal snack that goes perfectly with a cup of tea.
Traditionally they are made 3 months before Christmas and "fed" with either brandy or whisky at monthly intervals. Because of the alcohol the cakes are kept fresh for months, and even years though I have never seen a Christmas cake in my family last to the middle of January!

Unfortunately, I was too late this year to have a go making my own but I did find this beauty (weighing in at around 2kg) at the Christmas market at the weekend. Another Christmas job ticked off my list!
